I made Buckeyes for us Sunday night. They turned out pretty good and I thought I would share the recipe.
1 stick of margarine-softened
1 cup of peanut butter
16 oz. of confectioners sugar
1/2 cup of graham cracker crumbs
(graham cracker crumbs are an option I like because it adds something besides sugar and butters)
Mix these four things together. Roll into balls and refrigerate. While the balls are chilling, melt some chocolate. I used 'Almond bark' , but you can use chocolate chips, too.
I only used enough to fill a regular size soup bowl and melted it in the microwave for about a minute.
Then, use something like a toothpick to hold the peanut butter ball and dip into chocolate. Place on a plate covered with wax paper, or tin foil. Then, place in refrigerator to harden the chocolate. After a few minutes they're ready to eat!
